Extra Crispy Sauce

Extra Crispy Sauce

Peeled and Chopped Apples

Peeled and Chopped Apples

So I am a bit late to win the challenge ( only 1 year), but I still thought it would be fun to attempt this delicious looking recipe!  Kent is a huge fan of apple desserts, so this one was a must try!  I had a few hiccups in the process, but it came out amazing anyway.  This Salted Caramel Apple Crumble recipe came from Lauren’s Latest, and even though it is too late to win the coveted KitchenAid® appliances gift card, I thought I would still give it a shot 🙂

Parker went down for a nap, and I chopped and peeled the apples as fast as I could, and then attempted the caramel sauce.  This is where things got a bit…interesting.

The little guy awoke from his nap early right in mid caramel sauce cooking.  This required fetching him from his crib, feeding him, and putting him in the ergobaby all without neglecting the deliciousness cooking on the skillet.

Amidst this, I managed to overboil or underboil or something (there’s a big surprise), which resulted in my caramel sauce turning into caramel candy.  I was able to salvage the sauce by adding a bit more cream and melting it back down on low heat.  There were still some crunchy pieces, but I figured it is supposed to be apple CRISP, so it would just be a little extra crispy.

I put together the crisp part – YUM, and was able to follow the rest of the directions without much incident.  I served the dessert with Butter Pecan ice cream and it was SUCH a treat!  I will definitely make this again!
